Cooking guide (Whole Roast or Steak Cut)

Roast Whole (Showpiece Style)  

Best for: Events, restaurant service, carving station, luxury family feast

  1. Temper
    Bring to room temperature for 60–90 mins. Pat dry thoroughly.
  2. Season
    Keep it simple — sea salt + cracked black pepper.
    (Optional: light brushing of beef tallow.)
  3. Sear (High Heat Lock-In)
    220–240°C oven for 20 minutes
    OR hard sear all sides in a hot pan until browned.
  4. Roast Gently
    Reduce to 160–170°C
    Cook until internal temp reaches: 48–50°C → Rare | 52–54°C → Medium Rare  |(recommended)55–57°C → Medium
  5. Rest (Critical Step)
    Rest minimum 20–30 minutes, loosely covered.

Result:
Even blush centre, rendered marbling, buttery yet structured bite, deep umami finish.

• Avoid overcooking — Full Blood Wagyu shines at medium rare
