Hot & Fast Grill
Temper & Dry Bring to room temperature (30–45 mins). Pat completely dry.
Season Simply Sea salt + cracked pepper. Optional light brush of oil.
Grill Hot Very high heat BBQ or cast iron. Cook 3–4 mins per side depending on thickness.
Target Doneness Pull at 50–52°C internal (Medium Rare recommended).
Rest & Slice Correctly Rest 8–10 mins. Slice thinly against the grain for maximum tenderness.
