Cooking guide (High Heat, Slice Right)

Hot & Fast Grill 

  1. Temper & Dry
    Bring to room temperature (30–45 mins). Pat completely dry.
  2. Season Simply
    Sea salt + cracked pepper. Optional light brush of oil.
  3. Grill Hot
    Very high heat BBQ or cast iron.
    Cook 3–4 mins per side depending on thickness.
  4. Target Doneness
    Pull at 50–52°C internal (Medium Rare recommended).
  5. Rest & Slice Correctly
    Rest 8–10 mins.
    Slice thinly against the grain for maximum tenderness.

Result:
Caramelised crust, juicy interior, bold Wagyu richness with a satisfying bite.

• Do not overcook — flank tightens past medium
• Always slice thin and against the grain
